Caviar is light to dark steely grey, a product of its own rarity and exquisite flavour. This Sturgeon is the largest member of the family and can weigh over a ton, however typically between 100 to 250 kilograms with about 30 kilos of truly exceptional Beluga caviar. The Beluga may mature at be about 20 years old live to 80 years. This Beluga Sturgeon lives off the coast of the Caspian Sea. (Huso Huso)
